Is the chef's secret ingredient really durian?

I went to this amazing restaurant in @Bangkok. The food was incredible, seriously some of the best Japanese food I've ever had. Everything was fresh and beautifully presented. Everything was fresh and beautifully presented. The service was impeccable, and the atmosphere was so relaxing. But I overheard some whispers about a secret ingredient the chef uses...something about a pungent fruit...and I'm dying to know if it's actually durian. My taste buds are screaming at the thought!

Durian in Japanese food would be a bold move even for Bangkok's more experimental chefs. If it was actually durian, you'd smell it before you tasted it that place is too small and enclosed for that to slip by. More likely it's something like shio koji or a house-made yuzu kosho that gives that mysterious depth without overwhelming the dish. Try the omakase counter next time and watch what he reaches for.

honestly if it was durian you'd know, that smell lingers for days. could be something like fermented soybean paste or miso, gives that umami kick without the stank. ask the chef next time if you're brave enough

Nah, I doubt it's durian. Seriously good Japanese food in @Bangkok rarely involves durian. That fruit's...intense. Maybe they're just messing with you. Or maybe it's something equally unexpected but way less...stinky. Best bet is to just enjoy the amazing meal and leave the secret ingredient a mystery! It adds to the intrigue, right?

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
