So, I wandered down this street, Si Phraya Rd, right? It's all quiet during the day, little shops tucked away, mostly wholesalers it seemed. It's all quiet during the day, little shops tucked away, mostly wholesalers it seemed. But I saw this tiny, almost hidden, restaurant, just a few plastic chairs outside. The smell coming from inside was AMAZING. Seriously, the best Pad See Ew aroma I've ever encountered. I went in, tiny place, family running it, and the food was incredible. But I couldn't understand a word they said! I pointed and gestured, got some seriously delicious food, but... what exactly was in that sauce?! It was incredible, sweet and savory and kinda spicy... but I have NO idea what it was. Anyone know what magical ingredients make that Pad See Ew so amazing?

You probably hit a spot that uses fermented soybean paste in their sauce - it's common in old-school Chinese-Thai family recipes around that area. That sweet-savory balance with the slight funky depth is a dead giveaway. If you're back on Si Phraya, try the ones near the river end that serve it with crispy pork belly, they tend to be more generous with the sauce.

the dark soy they use is probably a brand called "hoy fong" or "kwong hung seng" - those are the thick, almost syrupy ones that give that deep color and sweetness. the heat might be from pickled green peppercorns too, not just chili, which is more common in central thai cooking around bangkok

A lot of those old Si Phraya spots use a splash of black soy sauce that's been aged for years, almost like a dark syrup. It's not the same as the stuff in bottles at Big C, it's way thicker and has this molasses-like sweetness that doesn't just taste like sugar. The family probably also tosses in a bit of white pepper powder, which gives that subtle heat that lingers differently than fresh chili. If you're ever back in that area around lunch, look for the places with a big wok station out front, they'll let you watch and you can point at the ingredients jar to figure out what's what.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
