Tabom's Secret?

So I finally got to try Tabom in Seoul. The galbi was amazing, seriously melt-in-your-mouth good. But the kimchi... it was a little... underwhelming. I've had kimchi all over South Korea, even some ra… So I finally got to try Tabom in Seoul. The galbi was amazing, seriously melt-in-your-mouth good. But the kimchi... it was a little... underwhelming. I've had kimchi all over South Korea, even some random street vendor stuff that blew me away. Tabom's just felt... mass-produced? Is their kimchi made in-house, or is it a supplier thing? I'm curious because everything else was top-notch. Maybe I just got a bad batch?

I'd actually give their kimchi another shot on a different day. Kimchi ferments continuously and what you get on a Monday afternoon can taste completely different from a Friday night batch. I live in Myeongdong and have noticed Tabom's kimchi varies a lot, sometimes it's got that deep sour funk and other times it tastes like it just came out of the jar. If you're back in the area, stop by the little makgeolli bar two blocks north on Toegye-ro, they serve house-made kimchi with their pajeon that's leagues better.

fwiw the kimchi at Tabom has been pretty consistent for me over maybe 10 visits, always that same mild, almost sweet style. not bad but def not the funky stuff. I think they just go for a crowd pleaser since Myeongdong gets so many tourists. if you want the real deal, walk 5 mins to Jongno 3-ga and hit up this tiny spot called Gwangjang Market's makgeolli alley, there's a lady there who ferments her kimchi in big earthenware jars right on the street, super pungent and garlicky

I've heard from a friend who used to work in Myeongdong that Tabom gets their kimchi from a factory in Icheon, not far from Seoul. The galbi marinade is definitely their own recipe, but the banchan is outsourced to keep costs down. For what it's worth, I actually prefer the kimchi at Wangbijip in Myeongdong, it's got that proper fermented tang and they make it in-house.

Coming from Haebangchon, take line 6 to Itaewon then walk up, taxi is only like 6,000 won though. Skip the scones honestly, they're dry. Order the first flush darjeeling a la carte and a slice of their matcha roll.
