The meat was incredible, seriously melt-in-your-mouth good. But, I was a bit overwhelmed by the sheer volume of different cuts, I couldn't keep track! They kept bringing more and more, I should of asked for a smaller portion. Next time, I'm definitely coming with a buddy to help me conquer this mountain of deliciousness. What's the best strategy to really sample everything without ending up comatose from food?

If you're hitting a place like Rainha do Churrasco in Itaewon, the real move is to tell the server upfront you want smaller slices of each cut. They'll bring you a thinner strip of picanha or a smaller piece of cupim, which lets you try everything without filling up too fast. Also, don't ignore the grilled pineapple that comes around, it's not just a palate cleanser, the caramelized sweetness actually helps reset your taste buds between the heavy beef. I usually start with the picanha and the alcatra, then time a red card break before the garlic steak comes out around 20 minutes in.

ngl the real pro move is to ask for the "queimado" if they have it. it's the outer charred layer of the picanha they usually trim off and most people don't know to ask for it. super crispy and fatty, like the best part of a steak crust but in little chunks. also don't sleep on the salad bar at Rainha do Churrasco, the vinaigrette they make with the diced tomatoes and onions is actually legit for cutting through all that beef fat between rounds

honestly the trick is to flip the little card to red the second you feel even a hint of fullness. no one cares if u take a break and go back to green later. also skip the salad bar entirely if u want to focus on meat, it's just filler. at Rainha do Churrasco in Itaewon they bring the garlic picanha around 20 mins in and that's usually the peak so save some space for it

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
