It felt like stepping into a different world, quiet, residential, with these amazing little family-run shops tucked away. I saw this tiny place selling the most incredible looking kimchi, but I was too shy to go in. Anyone know if they'll still be there next week? I really want to try that kimchi!

yeah that sounds like the place near the old pharmacy that closed a few years back. the ajumma there makes her kimchi with saeujeot (salted shrimp) from the market in gwangjang, not the pre-packaged stuff. she's usually out front around 4pm packing jars for regulars, just wave and she'll hand you a sample

If you're talking about the place with the handwritten sign in Korean and the stainless steel tables out front, that's Kim Dong-nyeo's spot. She's been there since the late 80s, and her son delivers to a few restaurants in Jongno now. Go on a Wednesday morning, that's when she's fermenting a fresh batch and in a chatty mood, you can just hover near the entrance and she'll wave you in. Grab the kkakdugi too, it's got a crunch that the baechu kimchi doesn't.

tbh youre fine, that whole stretch of deungyong-ro is like a time capsule, nothing really changes fast there. the kimchi place youre talking about is prob the one with the blue awning and the big clay pots out front, right? i walk past it on my way to the bus stop and the ajumma is always there around 11am doing prep, super chill about people poking their heads in. just go next week around then, grab a small container of the baechu kimchi, its like 7,000 won and way better than anything youll find in a mart

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
