Kind of tasted like art? Anyway, I spent half the time trying to figure out how to order and the other half wondering if the minimalist aesthetic extended to the cutlery. Seriously, where were the forks? I ended up using a tiny, weirdly shaped spoon for everything. It was an experience, let me tell you. My question is: what's the deal with the utensils?

Those concrete restaurants are usually in the Seongsu or Hannam-dong area, and the tiny spoon is almost always a deliberate choice to match the whole "raw materials" theme. If you're not into the performance, just say "sugeul jom juseyo" (수저 좀 주세요) and they will bring you a proper metal spoon and chopsticks without a fuss. Some of those places also have a hidden drawer in the table or a shelf under the bar where they keep the standard cutlery, so

honestly the tiny spoon thing is just korean dining culture bleeding into the "concept" spots. most korean restaurants give you a spoon and chopsticks by default, so places copying western fine dining get confused and just leave the spoon. next time try the place in jongno that serves everything on slate tiles, at least they give you proper chopsticks

That tiny spoon is standard in a lot of Korean restaurants, not just the minimalist ones. You get a spoon and chopsticks with every meal, and the spoon is meant for soup or rice, not for cutting steak. Those concrete places in Seongsu are just leaning hard into the aesthetic and skipping the fork entirely, assuming you'll manage with what's already on the table. If you want a fork, you have to specifically ask for it, they don't volunteer it because it breaks the vibe.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
