Does anyone know what the protest is today with all the red hats?

arrow_drop_up 2 arrow_drop_down

saw them by gwanghwamun around lunch, they were handing out flyers near the kyobo bookstore entrance. honestly the red hats are just the usual pension reform crowd, they come every other thursday. grab a coffee at the basement cafe in kyobo and you can watch the whole thing from inside, way better than dealing with the crowd. if u're not near there just use the side streets behind the sejong center, the police usually keep those open

if it's near seoul station instead of city hall, could be the medical residents again. they've been staging these white coat protests but some splinter groups wear red. also the civic groups do the red umbrella thing on tuesdays, not hats. best bet is checking the naver map live traffic before heading out, buses around jongno get messed up regardless

honestly the red hat thing has been going on since the chuseok holiday, it's the same rotating groups every time. if ur near euljiro instead of the main plazas, that's the small business owners doing their monthly thing, they always wear those bright red caps so the cctv picks them up. the real move is to just cross over to the han river side and walk the cheonggyecheon trail, zero crowd and u still get the city vibe without the megaphones

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 15 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
