For the shadow puppet show, the seats near the front are worth grabbing, the detail on the puppets is much easier to appreciate up close.
the dumpling place on minquan street is solid but honestly the best huaiyang dumplings i've had are from a tiny stall near the east gate of the mausoleum, no english sign just a red awning. they do a wild mushroom filling in autumn that's incredible and it's like 10 rmb for a plate. also if you're at dragon lake in the morning, there's a guy who sells fried dough sticks and hot soy milk from a cart by the south entrance around 7am, perfect before exploring. the wetland park is nice but bring bug spray, the mosquitoes near the reeds are aggressive in summer.
seconding the wetland park warning about bugs, seriously don't forget repellent. if you're into photography, dragon lake at sunrise is unreal, the mist sits low over the water and the willows frame it perfectly, i got some of my best shots there. also there's a small temple on the east side of the lake called xiangshan temple, not in many guides, free entry and the old caretaker will sometimes offer you tea if he's around

this is a solid list, i've done the kaifeng trip a few times from zhoukou. one thing to add: if you go to kaifeng, skip the main food street near millennium city park and walk a few blocks north to the small lanes off gulou street. there's a stall there that does this insane sesame seed cake with braised pork, costs like 5 yuan and it's way better than the tourist stuff
for luoyang, the longmen grottoes are stunning but it's a lot of walking on uneven stone steps. wear proper shoes, not sandals. i saw someone eat it on the stairs near the big buddha last spring and it was not pretty. also the water bus on the yi river gives a good view of the grottoes from below if your legs need a break
the xuchang suggestion is underrated tbh. it's so close and cheap, you can do the whole thing in a half day and still be back in zhoukou for dinner. the cao wei ancient city is mostly rebuilt but the chunqiu tower has this quiet courtyard garden that feels genuinely old. bring cash for the little tea house inside, they only take yuan
