the guide nailed the beef offal soup but nobody ever mentions the ginger vinegar pork knuckle at the tiny shop on Hou Street, behind the post office. my grandma took me there every winter solstice, it's like 12 yuan for a bowl & the vinegar is so strong it clears ur sinuses lol. they only open when the weather turns cold so dont bother in summer
also for the night market, 5pm is technically when it starts but half the good stalls dont roll up till 6:30 or so. showing up right at 5 means ur eating at the boring ones

Head there around 7 if you want to eat with the locals before the tour buses show up.
On the budget side, the 300 to 400 yuan daily figure is realistic but skews high if you skip taxis entirely. I did three days on about 220 a day by walking everywhere downtown and only taking the bus out to Qingyun. The transportation card is worth getting at any convenience store, saves fumbling for coins and works on buses 12 and 15 too.

also the green leaf cafe near people's square is cash only as of my last trip, no wechat pay, caught a few people off guard. they do a decent mushroom noodle bowl for 18 yuan tho.

also for the qingyun cable car, buy the round trip at the gate for 70 instead of two one ways at 40 each, saves u 10 yuan and the queue at the top station gets long by noon.
and the courtyard inn in old town, book direct by phone if u can, they knock like 20 to 30 off the listed rate for cash.
