Taipei's Best Veggie Beef?

Anyone know how they manage to make it taste so convincingly meaty? I'm a total carnivore, so I'm kinda curious and slightly skeptical. Is it some kind of super secret mushroom blend? Or are they using some crazy high-tech tofu sorcery? I need to know before I go!

the "beef" texture usually comes from pulled shiitake stems or sometimes seitan, not konjac, the chew is totally different. that place near 25.0271, 121.569 is on lishui st i think, and they braise the seitan in star anise and soybean paste overnight so it soaks up all the dark savory stuff. ngl for a carnivore the first bite is convincing but the finish is a bit sweet, so order the small bowl first before committing

its probably konjac or king oyster mushrooms shredded to mimic the texture, that spot near the corner of the alley uses a mix of both plus some fermented bean paste in the broth to get that beefy depth. tbh the umami comes more from the paste and mushroom stock than any tofu trick. if u want the real thing just go to lin dong fang a few blocks over but the veg version holds up fine for what it is

that spot on Lishui is solid but the trick there is actually dried radish and a splash of black vinegar in the broth, not just mushrooms. the vinegar wakes up the umami so your brain fills in "beef" even when the texture is a bit off. go before 1pm, they sell out of the good seitan batch by mid afternoon.

If you have personal experience with a place that helped alleviate jaw tightness or related headaches, please share: - The name of the establishment - The specific treatment you received - Whether you noticed a significant improvement

For muscle-based jaw tightness, the traditional 推拿 places often do better than the fancy facial spas, and they're cheaper. There's a small 國術館 near Shuanglian I go to for neck and jaw stuff, the guy works the masseter from outside and does traction on the cervical spine, which is where a lot of referred jaw tension actually starts. Around NT$800 for 40 minutes, no booking app, you just walk in. It won't fix a real joint problem but if your issue is muscular clenching it's worth a try.

if its actual tmj stuff and not just cosmetic face massage, go see a dentist who does 咬合板 (occlusal splint) first, the massage places treat the symptom not the joint. dr chen at a clinic off fuxing south road near daan park sorted my clicking in like 3 visits, mostly by adjusting my bite & giving me a night guard. the relief from that lasted way longer than any spa facial i tried

my physio at a small clinic near Liuzhangli MRT did intraoral work on my masseter and pterygoid muscles, basically gloved finger inside the cheek releasing trigger points. weird at first but it fixed the morning headaches within maybe 4 sessions. its not a spa thing at all, its rehab, so book it as a medical visit. 針灸 also helped me, the needles go in the jaw and temple, but the physio did more for the actual tightness.
