Good spicy ribs? Baby back ribs?

Where in seoul is something like this. Where in seoul is something like this.

If you're open to something a bit different from the standard saucy rack, there's a place in Jongno called Meat-ing that does a half-smoked, half-grilled baby back rib that's hard to find elsewhere. They finish it over charcoal so you get that smoky crust, and it's served with a tangy ssamjang-style dip instead of the usual bbq sauce. It's about 30k for a half rack and their lunch sets are a good deal, but they close between 3 and 5pm so plan around that.

There's a place in Gangnam called The 100 Table that does a solid version of baby back ribs. They use a Korean-style glaze that's more soy and gochujang based than the classic American sauce, but it works really well. The meat is tender and they serve it with pickled radish and a little salad on the side. It's around 40k for a full rack, and you'll want to make a reservation on weekends since it gets packed.

honestly if you want proper pork ribs in seoul, you gotta find the places that do them american-style rather than the korean galbi joints. there's a spot in itaewon called Linus' BBQ that does decent baby back ribs, saucy and fall-off-the-bone, comes with coleslaw and fries. they're around 35k won for a full rack i think. not gonna blow your mind but it scratches the itch when you're craving that heavy smoked flavor. if you're near hongdae, Suji's is another option but their ribs are more texas-style dry rub, less sauce

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
