But, the whole place felt...off. Like, there's this weird, almost unsettling stillness to the place, even when it's busy. It's not quiet exactly, just... hushed. Everyone seems to be talking in low voices. Is this a normal thing for Mirror Pond, or did I accidentally stumble into some kind of secret society meeting disguised as a restaurant?

lol the secret society thing made me laugh but honestly it's just how that street works. the whole area between gyeongbokgung and samcheongdong has this weird energy where everyone whispers, i think it's cause the palace guards do their changing ceremony nearby and people get into that headspace. if you want a place where people are actually loud go to Pyeongando Jokbal in jongno, it's this basement spot where ajummas scream orders and everyone's drinking soju by 6pm, total opposite vibe

ngl the hushed thing caught me off guard too my first time. i think it's partly because the restaurant sits right up against the palace wall, that whole area has this weird acoustic dead zone where sound just doesn't carry. the staff also do that thing where they shuffle instead of walk, makes the whole place feel like a library. if you want the opposite vibe hit up Gwangjang Market like 15 mins east, you'll get ajummas yelling at you to try the mung bean pancakes and it's pure chaos

honestly that's just mirror pond for you. it's not a secret society thing, it's more about the space itself. the restaurant is built into a traditional hanok with those thick stone walls and low ceilings, they absorb sound like crazy. plus the floor layout is all these little separated rooms so you don't get that open restaurant din. i've been there a few times and it always feels like everyone's in on some quiet pact. if you want the opposite energy try Tosokchon down the street, it's chaotic and loud and the samgyetang is legendary

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
