My Korean's...well, let's just say it's not fluent. I'm worried about getting completely ripped off trying to buy some fresh sashimi. Any tips for a newbie navigating the chaos and ensuring I get a fair price? I'd really appreciate some insider knowledge. I want to come away with some amazing, ethically sourced seafood, not a wallet full of holes!

ngl the translation app tip is good but what works better is just writing the price on your phone calculator and showing it to them. cuts through all the confusion, they type back a number, you type a lower one, back and forth til you settle. also if you're worried about ethical sourcing, look for stalls that have the blue "eco-friendly" certification stickers, they're usually near the right side of the main hall. and don't forget to check the tank water clarity, murky water means they're not changing it enough, that's a red flag for freshness regardless of what they tell you

honestly the upstairs restaurant thing is the move if you don't wanna stress. but if you really wanna buy direct, bring a korean friend or use a translation app for the price negotiation. the vendors at noryangjin are pros at reading tourists so they'll start high, just counter with half and work up from there. also check out the smaller stalls on the left side near the entrance, they're less chaotic than the main rows and the fish is just as fresh. for ethical sourcing, look for the "sustainable seafood" signs some stalls have, it's a newer thing they're trying

the upstairs restaurant thing is solid but if you want to do it yourself, focus on the side alleys not the main rows. the main stalls have higher turnover and more tourists so prices are inflated. go to the left wing where the smaller ajumma stalls are, they're less aggressive and more likely to deal straight. also, learn the word "sashimi" in korean (hwe) and just say "hwe juseyo" with a smile. they'll prob take you more seriously. for ethical sourcing, ask if it's "donghae" (east sea) caught vs farmed, that's the key question the locals use

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
