Every table seemed to have a little, almost hidden, extra dish. Tiny, almost unnoticeable. Nobody seemed to talk about it, the staff just kinda put it there. What's the deal with that mystery dish? Is it a regional specialty? Something for regulars only? I'm dying to know!

That little dish is their "sseol" or table scrap offering, a holdover from the old school jeong-dong grills. Basically, they take the fatty trim from the galbi prep, mince it up with some garlic and soy, and serve it as a freebie to balance the richness of the main meat. It's not seasonal or for regulars only, it's just a practical way to waste nothing and give you a little extra flavor. I've seen some folks mix it into their ssam or just eat it straight as a starter.

haha you stumbled onto one of the little things that makes Tabom special. That mystery dish is prob their "sunchang" or house-made doenjang jjigae base they give out as a palate cleanser between meats. Its not on the menu but theyve been doing it for years, old school style. Some regulars actually ask for extra to dip the ssam veggies in instead of the usual ssamjang.

oh yeah that little dish is totally their "gombang" or galbi trim scrap they fry up with gochujang and a bit of perilla oil. it's not a secret, just a throwback to when they'd use every part of the meat. some tables get it, some don't, depends on how busy the kitchen is or if the head cook remembers lol

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 14 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
