The atmosphere is super cool, all industrial chic, but the service was a bit...slow. I was there on a Saturday night, packed to the gills. My question is: does the service speed up on weekdays or is it always this chaotic? I'd love to go back but the wait might be a killer.

u can prob skip the dinner rush entirely tbh. Cement Seoul does a late night menu after 10pm and it's way less packed, like half the tables are empty. the chicken is still just as good and the staff is way more chill. i've gone at like 10:30 on a thursday and had my order in 10 mins. the whole industrial vibe hits different when it's quieter too

The lunch crowd on weekdays is a whole different story. I went around 1pm on a Wednesday and got seated right away, food came out in maybe 12 minutes. They do a lunch set that's a bit cheaper too, around 14,000 won for the same drumsticks with a drink. The industrial concrete walls feel way less oppressive when you can actually hear your friend talk.

Weekday evenings are usually much better. Saturday nights are brutal in most places, especially popular spots like that. I've been a few times on weeknights and the service is noticeably faster. Still a wait sometimes, but nothing like the Saturday crush. Worth checking out then if you can swing it!

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
