Camp Coiner's Mess Hall Mystery?

Folks say the kimchi jjigae there is something else, but the stories are kinda vague. Is it REALLY that good, or is it just army-food hype? I'm trying to mentally prepare myself for potentially the best or worst meal of my life. Seriously, someone spill the kimchi jjigae tea.

people keep talking about the batch pot and timing but nobody mentions the hanjeongshik tray they do on the first friday of the month, that's the one worth planning around. they lay out like twelve little dishes, japchae, seasoned spinach, that soy-glazed mackerel, and the jjigae's still there but it's more of a supporting actor. the civilian kitchen staff really show off that day.

if your conference is midweek, don't stress it, just hit the stew early and add a spoon of the perilla oil from the table. also the mess hall's got this weird rule where visitors need a cash deposit for trays, so bring a 5,000 won note or they'll hold your ID at the counter.

Skip the weekday hype entirely and aim for the Sunday brunch window if your conference schedule allows. The jjigae's still there, but the real draw is the short rib stew they only break out on weekends, it's got that slow-braised gelatinous texture the daily rotation never achieves.

Your sponsor can get you in, but make sure they know the visitor parking situation, the lot by the gym fills up fast and you'll end up circling for twenty minutes. If the mess hall disappoints, the kimbap place on the service road is a twenty minute walk and does a mean spicy pork wrap, though I'd take the curry night on Wednesdays over both if you can swing it.

i'll be real with u, the kimchi jjigae's decent but the legend's more about the ritual than the recipe. everyone lines up at 11:30 like it's a concert, but the actual move is to grab a tray and head for the far corner near the drink station, that's where the stew's been bubbling longest and the pork's rendered down into something almost sweet. skip the rice, they've got this cold buckwheat noodle side that cuts through the spice way better.

if ur conference runs late, the real gem is the curry night on wednesdays, it's this japanese-korean hybrid that the cooks clearly care more about than the daily jjigae. and dont bother with the sundae shop across the street, it's overpriced for tourists, walk five minutes to the little kimbap place on the corner of the service road instead, they do a tuna mayo roll that'll actually save u if the mess hall misses. honestly just go in expecting a solid canteen and u won't be disappointed, but bring ur own gochugaru if u want that real kick.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 14 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
