The sheer scale of it was insane! I got totally overwhelmed trying to navigate the bustling stalls, the smells were intense... and I ended up buying way more seafood than I could possibly eat. Seriously, my fridge is overflowing with fish. My question is: What's the best way to preserve all this amazing seafood without it going bad before I can eat it all?! I need tips, people, I'm drowning in deliciousness!

yeah the freezing advice is solid but honestly if you have a balcony or rooftop access, korean winter is basically a free deep freeze right now. just hang the fish out overnight in a plastic bag and it'll freeze solid naturally, saves your freezer space for other stuff. for the fish you want to eat in the next day or two, make a quick jangajji with some soy sauce, vinegar, and gochugaru - that pickling style keeps it good for a week and makes a killer banchan. also if you live near a marts or gwangjang, you can trade some of your haul with the dried fish vendors, they'll swap your fresh stuff for their preserved ones

The upstairs restaurants are the real hack for next time, just let them handle the prep and cooking on the spot. For what you've already got, I'd sort it by type and make a batch of maeshil or soy sauce marinated crab if you bought any raw crabs, that keeps in the fridge for a week and gets better each day. For the fillets, a quick salt brine for 20 minutes before you fridge them firms up the texture and buys you an extra day or two. And don't sleep on making fish cakes with any leftovers, you can freeze those flat and they're great for soup or pan-frying later.

imo the real trick is to figure out which fish are better raw vs cooked and go from there. anything with that clean mild taste like halibut or flounder is perfect for hoe, just slice it thin and eat within 24 hours. the stronger tasting stuff like mackerel or beltfish does way better if you give it a quick pan sear with a little salt and sesame oil, then it keeps in the fridge for 3-4 days easy. also if you got any of those tiny shrimp or squid, just blanch them for 30 seconds and toss with gochujang and vinegar, that'll stay good for a week as banchan

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
