The place is nuts! Seriously, every surface is covered in dog stuff, paintings, figurines, you name it. Food was...interesting. I ordered the "Paw-some Pasta," which sounded cute, but tasted like someone dropped a whole jar of chili flakes in it. My question is: Is the chili-pasta-apocalypse a regular thing, or did I just get unlucky? They had this amazing looking kimchi stew someone else was eating, maybe I should of tried that instead...

It really depends on the day, I've noticed the pasta's spice level changes based on who's working the wok. If you go back, try sitting at the front table near the window, the owner's dog usually naps there in the afternoon and you can pet it while you wait for your food. The kimchi stew is a safe bet, but I'd also recommend the soondubu if you want something gentle on your stomach.

yeah the pasta is a total gamble, i think the head chef is just super heavy handed with gochugaru on certain days lol. the kimchi stew is a solid choice but honestly their dwaeji gukbap is the real sleeper hit, it's not super advertised but it's this rich pork soup that hits way better after a night out in hongdae. if you go back, try sitting at the bar area near the kitchen, you can sometimes catch them making the off-menu stuff that the regulars order.

ngl the kimchi stew is definitely the move but there's this off-menu thing they do called the "bark bark bulgogi" which is basically just their bulgogi but they wrap it in a weirdly good sesame leaf and rice cake situation. ask for it by name, the old lady who runs the kitchen knows what's up. also the pasta is a total crapshoot, i've had it three times and it was different every single time, one was almost dessert-level sweet which was even weirder tbh

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 14 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
