The hotel itself was fine, pretty standard fare, but the elevator music... man, it was something else. It was this incredibly upbeat, almost manic, K-Pop remix of what sounded like elevator music from the 80s. It was playing on a continuous loop. I swear I started hallucinating by the third day. It was driving me nuts. My question is: Is that elevator music a permanent fixture or some kind of bizarre art installation? Seriously, I need to know if I should prepare myself for sonic warfare next time I stay there.

That K-pop remix has been there since at least 2019 when I had a friend stay there for a conference. I think it's just the hotel's attempt at being "modern and fresh" but they forgot to change the playlist after the first month. If you go back, ask for a room on the lower floors, the stairs are actually faster than waiting for that elevator anyway.

yeah it's permanent, been that way since at least 2017 when i first stayed there for a work thing. i asked the front desk once and they said it's "brand identity" which is hilarious. if you're back in euljiro, skip the headache and just walk to the hotel from 을지로3가 station exit 7, it's a shorter trip than the elevator anyway and you get to see the street food stalls

ngl i've timed it too and it's exactly 47 seconds, which is honestly impressive commitment to a single track. i heard from a friend who used to work the front desk that the gm's nephew produced it as a school project and they've been too embarrassed to switch it since. if you're stuck in euljiro again, the 하늘공원 observatory is a 10 minute walk from the hotel and the elevator there plays classical piano, much less existential dread

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 14 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
