I ordered the kimchi jjigae, it was incredible, seriously the best I've had in @Seoul. But here's the thing: I saw this tiny, unmarked door in the back. It looked like a staff-only entrance. Anyone ever been in there? What's behind that door?!

honestly i think that door leads to their little rooftop space. i was there last month and saw someone coming down from the roof through that same door, they had a tray of empty glasses. maybe they do private events up there or just let staff chill out between shifts. worth asking next time if u can peek up, the view over hongdae is pretty nice at night

Nah, man, I've been going to Dogdogdog for ages. Never noticed a door. Maybe it's a secret storage room for their kimchi, they go through a LOT of it. Or maybe it's a time machine that sends you back to 1998 and you have to explain memes to people. That'd be a better story, anyway.

i asked my buddy who used to work there about that door once. he said it's just a tiny storage room but they keep the good soju back there for the staff, not the stuff they serve to regulars. honestly that's prob why the place is always packed, the workers are having a better time than the customers

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 15 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
