The food was phenomenal, seriously some of the best Korean fusion I've ever had. But man, the music was loud. I mean, ear-splitting loud. I know it's supposed to be part of the vibe, but I couldn't even hear my friend talk halfway through the meal. Is it always this loud, or was I just unlucky? Maybe they have quieter seating areas I didn't notice? I'd love to go back, but only if my eardrums survive.

Cement Seoul's volume is pretty much baked into the design, that concrete shell just turns every conversation into a shouting match. If you want the food without the noise, their lunch hours on weekdays are a different animal, you can actually hear the sizzle from the kitchen. I live over by Mangwon and I've walked past on Friday nights where the bass rattles the windows, so the patio on a warmer day is your best bet for a return trip.

ngl i think you just got unlucky with timing. i've been maybe 4 times and it varies a lot, like weekend dinner vs wednesday lunch are totally different planets noise-wise. the back room near the private dining area is prob your best bet, it's kinda tucked away and the speakers don't hit as hard back there. also if you go during golden hour the light through those factory windows is gorgeous and kinda distracts from the noise

It's not just you, that place is basically a concrete echo chamber. I live a few blocks away and can sometimes hear the bass from their weekend parties on the street. If you're set on going back, their lunch service is a totally different experience, way quieter and you can actually taste the food without your ears ringing.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 15 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
