ngl it sounds like you hit up Concrete Museum in Hongdae. their trick is actually pretty clever - they use the cement walls as thermal mass, so it stays cool at night after baking all day. summer afternoons can get rough tho, i'd go for a late dinner around 8pm when it starts evening out. the soju selection there is underrated btw, try the yuja one if they have it

But the real trick is the ventilation, they've got these floor vents that push cold air up constantly, so your feet stay chilly even if the walls are warm. Weekday lunch is way less crowded and the galbi-jjim is worth trying instead of the bulgogi.
oh yeah that place is always packed on weekends. they've got some serious industrial ac units hidden around, i asked once and the owner just laughed and said "seoul summers, you adapt"

the n37 bus tip is gold, i've used it more times than i can count. one thing i'd add for the hongdae crowd is that if you're into the indie scene, skip club ff and go to strange fruit instead, it's a tiny basement venue off the main drag that books local punk and shoegaze bands for like 5k won cover. the sound system is janky but the energy is way more authentic than the tourist-heavy spots. also for gangnam, the line at octagon can hit 30 minutes on weekends so get there before 11pm or just go to arena which is less crowded imo
