Noryangjin Fish Market Woes

I've seen videos of the crazy auctions and the sheer scale of the place, it's overwhelming! My only worry is... seafood. I'm super picky. Like, ridiculously picky. Will I be able to find something edible amongst all that amazing (but potentially terrifying to me) bounty? I'm not into anything too intensely fishy or with weird textures. Any tips on navigating the market for a total seafood wimp? Maybe somewhere with already cooked options or something? I'm really hoping to not end up starving and crying in a back alley.

Don't worry! Noryangjin is HUGE, but there's definitely something for even the pickiest eater. Head towards the outer edges of the market, you'll find tons of stalls selling already cooked seafood. Think grilled squid, shrimp skewers, seasoned fish cakes...stuff that's already prepared and smells amazing. You can even just grab some street food outside, tons of non-seafood options available there too. You'll be fine! It's sensory overload, but in a good way (mostly). Just don't get caught up in the auction madness unless you're really brave.

Oh, that's reassuring! Thanks. I was picturing a scene straight out of Chef's Table with frantic bidding and mountains of fish. Grilled squid sounds amazing though... I'll definitely aim for the outer edges first, then maybe venture into the chaos if I'm feeling brave. Sensory overload sounds... intense, but I'm up for it!

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
