But I'm a night owl, and their rooftop bar... well, it was almost TOO chill. Like, eerily quiet some nights. I'm wondering if it's always like that, or if I just hit it on some off nights? Anyone else been there and experienced the same thing?

seems like you got the quiet side of the ip rooftop coin flip. it's weirdly hit or miss like that, probably because the hotel itself is more of a business/date crowd than a party one. if you want guaranteed chaos, head to octagon in gangnam, it's a club not a bar but the rooftop section there is insane on weekends, just be ready for a line. or take a taxi up to n seoul tower, the n grill has a rotating floor and the view makes up for the lack of rooftop bar energy, plus it's open late enough for night owls

yeah the IP rooftop is def a gamble, i went there on a tuesday and it was basically a library with a view. if you want something with actual noise try The Lounge & Bar at the Grand Hyatt, it's bougie but the crowd is way more into it. also check out Charles H. underground in Itaewon, not a rooftop but the vibe is way less awkward and the drinks are better imo.

IP Boutique is in a weird spot honestly. It's close to the action but not right in the middle of it, which is why the rooftop can feel dead. If you want that buzzing energy you gotta go to the bars on the main strip in Hongdae or over near the Namsan cable car. The IP rooftop is more of a date spot where people stare at the skyline in silence.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
