yeah getting to incheon by 6 from samyang is tough on public transport. the 6011 first bus from the area is like 4:30 and takes forever with all the local stops so you'd be pushing it. if you really wanna save money you could take the first bus to hongdae then catch the all-stop arex train but that's a hassle with luggage and still tight timing.
for taxis tbh you could also try the macaron taxi app if you don't have kakao set up. same thing basically but some people find the interface easier. just book it for like 4:30-4:45am and you'll be fine. the fare is usually around 65-70k if you go via the olympic expressway, just make sure the driver actually takes that route and not the local roads.
The 6011 bus is your only real public option but the first one from Samyang Sageori doesn't leave until around 4:30 and takes over 90 minutes with all the stops, so you'd be cutting it close. For 6 AM arrival you want to be at Incheon by 5:30 at the latest to account for check-in and security.
The taxi price someone mentioned is about right, maybe a bit more if you're coming from the side streets near Samyang Sageori. One thing to keep in mind is that early morning taxis in that area can be scarce since it's not a major commercial zone, so book it through the KakaoT app the night before rather than trying to flag one down on the street.
For cash on buses, the driver can load your T-money card with cash if you have exact change, but they won't give change back. The convenience store across from Samyang Sageori Station exit 2 sells and reloads T-money cards if you need one.
tbh the airport bus 6011 runs from near Samyang Sageori but first bus won't get you there by 6am. the Namsan stop is closer to where you'd catch it but even then you're looking at like 4:30-5am arrival at best. cash works on all city buses and airport buses just have exact change since drivers don't give change on the bus itself.

honestly the guide nailed most of it but i gotta shout out the ssamgyeopsal at samwon garden in apgujeong. it's pricier than mapo alley but the pork belly is thick cut and they grill it over charcoal which makes a huge difference. also if you're at gwangjang market don't skip the mayak gimbap, it's those tiny seaweed rolls with carrot and spinach, three bucks for a tray and they're dangerously addictive
