Seoul's winter food: must-try dishes?

I'm visiting Seoul this winter for a few days. Had bibimbap in Austin, wasn't impressed. Really looking forward to trying sulbing.

Forget bibimbap – that's a dish you can get anywhere. For authentic Seoul winter warmth, you need to go for jjigae (stew). Kimchi jjigae is a classic, but try a different kind like sundubu jjigae (soft tofu stew) for something spicier and lighter. And definitely don't miss out on hotteok (sweet pancakes) – they're the perfect street food for a chilly day. Sulbing is great for dessert, as you planned!

Great suggestions! I hadn't even considered sundubu jjigae, that sounds amazing. And hotteok is a must – the gooey sweetness is the perfect counterpoint to all that spicy stew. I’m sold on the jjigae options over the usual tourist fare. Thanks!

I stayed there last year! The rooftop bar is pretty much exactly what the pictures show... maybe even better. Killer views. They have a good cocktail menu, though it's a bit pricey. Worth it though for the atmosphere, imo. You'll have a great time. Just be prepared to possibly queue if you go on a weekend.
