If you're based in Jung-gu, the Seoul City Wall trail is a solid option that most visitors skip. You can pick it up near Namsan and walk a section with great views of the downtown skyline, and it's free. For cheap food, head to the underground shopping arcade at Euljiro 1-ga station, there's a row of tiny restaurants where a bowl of bibimbap runs about 5,000 won and they serve it with real side dishes, not just the basics.
The walk from there to Cheonggyecheon stream is only a few minutes, and it's a nice break from the crowds. Grab a can of sikhye from a convenience store and sit on the edge for a bit.
honestly for one day in jung-gu i'd just focus on one area instead of trying to see everything. walk from myeongdong station exit 6 up to namsan cable car, the view from n tower is worth the 14,000 won round trip. then come back down and wander into the side streets near hwanghak-dong flea market, it's open on weekends and you'll find old korean vinyls and weird antiques for like 1,000-5,000 won
for cheap food the kimbap heaven chain is everywhere in jung-gu, a roll is 2,500 won and they have hot soup options too. better than the tourist traps near myeongdong where a single gimbap roll costs double. also the convenience store triangle kimbap and a banana milk is like 3,000 won total, perfect for eating while walking between spots
one day in jung-gu is tight but doable. honestly i'd hit gyeongbokgung palace first thing in the morning, it's a short bus ride north or just grab a taxi for like 5,000 won. after that walk over to insadong for lunch, there's a ton of cheap noodle places tucked in the alleys, a bowl of kalguksu is usually under 8,000 won and super filling.
for cheap food in jung-gu itself, check out the basement food courts in big dept stores like lotte or shinsegae near myeongdong. they do these tray lunch sets for like 6,000-9,000 won and the quality is pretty good. also ngl the gwangjang market is a 15 min walk from jongno 3-ga station and you can eat a feast of bindaetteok and tteokbokki for under 10,000 won total. just avoid the touristy stalls right at the entrance, walk a bit deeper

the n37 bus tip is gold, i've used it more times than i can count. one thing i'd add for the hongdae crowd is that if you're into the indie scene, skip club ff and go to strange fruit instead, it's a tiny basement venue off the main drag that books local punk and shoegaze bands for like 5k won cover. the sound system is janky but the energy is way more authentic than the tourist-heavy spots. also for gangnam, the line at octagon can hit 30 minutes on weekends so get there before 11pm or just go to arena which is less crowded imo
