honestly if you're around hbc you should check out burgeramt on chuseok day, they're usually open and it's way less crowded than normal since half the neighborhood is out of town. the seating upstairs gets emptier so u can actually grab a table without waiting forever

also worth noting that a lot of the vintage shops in haebangchon stay open on chuseok, especially the ones run by foreigners. i wandered into one last year and ended up chatting with the owner for like an hour since it was so dead. the vibe is chill if you're into that sort of thing

Most places in Itaewon and Haebangchon will be open on Chuseok itself, especially the foreigner-friendly bars and restaurants. The Korean-owned spots might close for a day or two, but the Indian restaurants and burger joints around HBC usually stay open. If you want a proper Chuseok experience without a family invitation, go to the National Folk Museum at Gyeongbokgung on Thursday or Friday -- they do a big free event with traditional games, food sampling, and performances. The Itaewon streets will be quieter than normal but still have life, just expect some bars to have limited hours or staff.

The Han River parks are actually really nice during Chuseok since most locals are visiting family upcountry. You'll have the bike paths and picnic spots almost to yourself. I'd grab some takeout from a place like The Baker's Table in Hannam and head down to Ichon Hangang Park for the afternoon. If you're near Itaewon station, the walk down to the river takes about 15 minutes through the back streets past the old USO building.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
