While I'm there, I also plan to experience the city. While the tattoos are my main reason for going, it's also really important to me to be able to experience the city and its surroundings.

I'm currently trying to plan a 1-month stay, and was wondering of it's better to go for entirety of January or mid-May to mid-June. I heard July and August are not the best due to weather.

I'll be starting a Master's program, so these two are pretty much my only options if I want to stay for a month.

honestly january is brutal here. not just cold but that dry wind cuts right through you. youll spend half your trip in a basement cafe trying to thaw out instead of exploring. mid-may to mid-june is peak spring weather, cherry blossoms might be late but the hills around bukchon are lush and green. plus the outdoor markets like gwangjang are way more enjoyable when youre not shivering over your bindaetteok.

mid-may to mid-june for sure. january is just grey and cold, you'll be stuck inside most of the time. that late spring window has perfect weather for walking around hongdae or hiking bukhansan, and the city feels alive with people out on the streets. tattoo healing is also way easier when you're not dealing with heavy layers and dry indoor heating.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
