Did you ever hesitate entering the restaurant? If so, what was the reason?

Asking for research purpose!! It would be greatly appreciated if you can leave comment with detailed explanation as well

ngl the hesitation for me is always about solo dining, not the food. places with those big group tables or the ones where you gotta sit shoulder to shoulder with strangers, i'll stand outside way too long trying to figure out if i can just order one thing and not look weird. there's this jokbal place in jangchung-dong, super famous, but the tables are all set for four and the ajummas look at you like you're lost if you're alone. i finally got over it by going at like 3pm when it's dead, ordered the half portion, and honestly it was worth the awkwardness. also if you're solo, just sit at the bar at any gopchang place in mapo, they don't care, you're there to eat not to talk.

tbh i hesitate all the time at places with long lines, like gwangjang market spots. i know it's hyped but waiting 30 min for a bindaetteok when i can just walk two blocks and get one that's just as good, maybe better, feels like a scam. but the one time i actually turned around was at this tiny place in hongdae that only had a plastic curtain and no menu outside. i thought it was closed or sketchy, turns out it was a hidden gem for kalguksu. now i just push through the awkwardness, worst case i eat somewhere else.

the hesitation for me is always about the price, not the vibe. like those places with the handwritten menu on the wall, no prices listed, just a bunch of korean scribbles. i stood outside this samgyeopsal joint in sangsu for a solid 10 minutes trying to figure out if i was about to drop 50k won on accident. finally went in, asked the ahjussi directly, and he just laughed and pointed at the chalkboard special. turned out to be 15k for a set meal, totally fine. now i just walk in and ask first, saves me the mental math and the awkward standing around like a statue. also if they got a daily special written in chalk, that's usually the move, cheaper and fresher than the regular menu.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
