Hi hi πŸ‘‹ ,

I'm planning on going to pop up stores in Seongsu. It will be my first time and so far Ghana / Welch's / 100 look interesting. Let me know if there are any other ones I should give it a try.

Hoping to go during weekdays and open to any days for next two weeks!

the welch's one is cute for photos but the wait can be 30+ min even on a tuesday afternoon. if you wander down seongsu-ro 10-gil there's a small building with 3 popups running right now, one is this ceramic brand doing custom stamp workshops for 15,000 won and it's usually empty because people don't know it's there. also the frieze seoul collab popup near the seongsu station exit 4 has some genuinely good prints for sale, not just promo stuff

yeah weekdays are smart, seongsu gets wild on weekends. if u like the 100 aesthetic there's a d&department popup near the seongsu bridge side that's been doing these limited edition ceramic collabs with local artists, way less crowded than the main drag spots. also the london bagel museum just opened a pop-up cafe on the second floor of that old shoe factory building, the cream cheese ones are solid but their iced matcha is mid tbh

oh the 100 popup is cute but be warned the line gets long even on weekdays, maybe go right when they open. there's a gentle monster popup nearby too, their installations are always wild, worth a quick stop even if u dont buy anything

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 15 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
