honestly if ur near asakusa, nakamura-ya at the nakamise market opens at 9 and has been doing matcha since the 1850s. grab a bowl standing up at their little counter, it's not a fancy sit-down thing but the history is real. also cheaper than most of the trendy spots in shibuya.
Honestly if you're near Asakusa, try Nakamura Tokichi at the tourist info center. They open at 10 and serve a solid matcha latte with actual ceremony, not just powder mixed in. Also cheaper than the Ginza spots, like 600 yen for a bowl of matcha.
cha-no-ma in sangenjaya opens at 10, which is earlier than most. it's a proper sit-down place with matcha and hojicha, not just konbini stuff. about 10 min from the station, worth the walk if u want something real before the 11am wave
