honestly just go to any department store basement food court, like isetan in shinjuku or takashimaya in nihombashi. the cheese tart shops there always have a fluffy souffle version and they make them fresh throughout the day. prob cheaper than what pablo was charging too

i think pablo had a popup for a bit but yeah most are gone now. try family mart actually they have a decent frozen one you microwave

Oh yeah, tons of places still do it. Try the one at Mr. Cheesecake in Shibuya, it's super fluffy and not as touristy as the old Pablo spots.
