the jian bing situation in berlin is pretty scattered tbh. there's a spot inside the maybach ufer market hall that does them on weekdays too, not just weekends, and they're pretty consistent. it's a small stall near the back, the lady running it has been there for years

for taiwanese with veggie options, good old days on warschauer is worth a look. they're more known for their hot pot but the veggie broth is solid and they have a few tofu dishes that aren't just an afterthought. also, if you're up for a bit of a trek, the place on kantstrasse near savignyplatz has a separate vegetarian menu page, which is rare for chinese places here

honestly the best jian bing i've had in berlin is at the little window stall inside go asia on frankfurter allee, not the dong xuan one but the supermarket near u-bahn samariterstrasse. they do it all day and it's like 5 euro, crispy and with that proper sweet bean sauce. for taiwanese with veggie options, try mama thai on weserstrasse in neukölln - they're actually run by a taiwanese family and have a whole veggie section on the menu, the braised tofu rice bowl is solid. also if you're near friedrichshain, jolly on boxhagener strasse does a decent mapo tofu that's veg friendly and open late

yeah dong xuan is the main spot for jian bing but honestly the quality varies a lot by stall. the one near the entrance on herzbergstrasse is usually decent and they make it fresh. for taiwanese with veggie options, mr. chi on torstraße has a few dishes that work, their scallion pancake is good and you can ask for no egg. also check out good friends in prenzlauer berg, they're more sichuan but have a surprising amount of vegetarian stuff on the menu

Worth noting that Berlin street names have official umlaut and ß rules that trip people up, so a sign showing "Strasse" versus "Straße" is not actually a spelling error, just an older transcription. Same with "ue" versus "ü" (e.g. "Kantstrasse" vs "Kantstraße"), both are considered valid renderings and you'll see the ß version on the blue Schilder and the ss version on older plaques or in databases that predate Unicode. If the difference you're seeing is between those two forms, there's nothing to fix and both are technically correct.

if the signs u mean are the old enamel ones on the house facades those are often protected as Baudenkmal so nobody's allowed to correct them even if the spelling is outdated. the binding version is whatever is in the Berliner Strassenverzeichnis plus the entry in the Liegenschaftskataster, so if u tell me the street i can point u to the right Bezirksamt Mitte or Charlottenburg-Wilmersdorf page. tbh the merged district thing is real but the facade signs are a separate story, theyre basically museum pieces at this point

honestly thats super common in Charlottenburg, the district offices were merged from older Bezirke and nobody ever fixed all the Schilder. if its a real street you can check the official strassenverzeichnis on berlin.de, that list is what the Burgeramt actually goes by. which street is it? some of the Kaiserdamm / Kantstrasse signs are notorious for this.
