auntie chen's is the real deal, but her stall's only open until like 1pm so don't sleep on it. if you go around 10:30 you'll get them fresh off the pan and the line's still short. also worth checking out the little tea house at 8 old street just around the corner, they do a nice osmanthus tea for 15 yuan and you can sit by the window watching the canal boats go by
The bamboo forest trail is a good recommendation, but if you have time, head a little further north past the bus station to the old canal lock. It's about a 10-minute walk from where the trail ends. The lock itself isn't much to look at, but the stone platform right next to it gives you a perfect view of the sunrise over the water. I've gone there a few times around 5:30 AM and had the whole place to myself. It's a nice contrast to the busy night market later in the day.
imo the canal boat ride is the best thing on this list but skip the 4pm slot unless you like baking in the afternoon sun. i went at 9am on a tuesday and had the boat to myself, the old guy piloting pointed out which bridges were original Ming dynasty and which ones got rebuilt after a flood in the 90s. he even slowed down near the third bridge so i could see the carvings underneath, apparently they're supposed to be dragons but weather's worn them down to vague snake shapes.

honestly this is a really well thought out itinerary, you've clearly spent time in town. the only thing i'd tweak is day 1 lunch at lao yang noodle house - they're good but the queue does move fast because it's tiny, like 8 seats tiny. if it's raining or the line looks long, just walk two mins further down zhongshan to xiao mei's stall, same price but she does a mean wonton soup that's actually better for a cold day
for day 2 the opera house is worth it but get the cheap seats in the back, the acoustics are actually better up there. i went once and sat front row and the guy next to me was sniffling the whole time, ruined it a bit
the green valley trail tip about the pond is solid, i took that detour last spring and it was dead quiet, just me and some ducks. bring a snack cause theres nowhere to buy food once you're past the entrance
you've got a really nice balance here, old town culture then nature, that's the way to do it. For the museum on day 1, don't skip the basement floor, most people do, but that's where they keep the actual canal boat models and old navigation tools, the upper floors are mostly ceramics and text panels
day 2 at the flower market, if you see a woman selling dried persimmons near the east gate with a blue cart, grab some, she's there every morning and they're sweeter than the prepackaged ones at the shops. also the tea story on wenhua road is fine but if you want something more local, walk to the end of the street and turn left at the pharmacy, there's a tiny place called Old Chen's with no sign, just a red lantern, his oolong is 20 RMB a pot and he'll chat with you if it's quiet
green valley trail is great but the path gets muddy after rain, so check the weather the night before. i did it in sneakers once and regretted it, the bamboo grove section is steep in places
