the farmers market tip is good but honestly the real move is going to the dried goods section behind the main produce area, there's a woman there who sells these little hand-rolled sesame candies that i haven't seen anywhere else in town, 10 yuan for a bag and they're perfect for snacking on the hike day 2. also on day 3 if you do the art gallery it's tiny, like 15 minutes tops, so it's easy to squeeze in even if you're short on time
This is a solid itinerary, you've covered the main spots well. One thing I'd add for Day 1 is that if you're at the Confucian Temple around noon, the vegetarian noodle stall just outside the east gate is a hidden gem. The old lady running it makes a mean bowl of su mian for about 8 yuan, and it's a nice change from the lamb-heavy options.
For Day 2, the hike up Qingyang Mountain is steeper than most people expect, especially the last stretch to White Cloud Temple. I'd suggest taking a bottle of water from the base because the vendors at the top charge double. The view from the summit is worth the sweat though, you can see the whole city spread out on a clear day.
If you have an extra hour on Day 3, skip the art gallery and walk north along the old city wall instead. There's a short stretch near the north gate that's been restored, and it gives you a different perspective on the old town layout. It's free and usually empty.
i'd swap the art gallery on day 3 for a quick stop at the old papermaker's workshop on bell street, it's tucked behind the farmers market. they still make xuan paper by hand and you can buy sheets for like 5 yuan, way more interesting than the gallery tbh. also on day 1, the confucian temple garden gets crowded after 10am so go right at opening if u want quiet. solid plan overall though, you'll eat well and see the real spots

ngl the nature lovers section is underselling the zhou ancestral temple area a bit. if you're into hiking, skip the eco-lodge and look for a farm stay on the south side of the temple - there's a family that rents out rooms for like 180 a night and they'll pack you a lunch for the trail up to the loess plateau overlook. the view from up there at sunrise is nuts, way better than anything you'd get from a hotel window. just bring cash, the farm stays don't take cards and the nearest atm is a 20 min bus ride back into town
one thing i don't see mentioned is that the ramada encore has a rooftop bar with a solid view of the city skyline at night, not fancy but good for a beer after work. if you're in the business district, skip the hotel breakfast and walk two blocks east to the little dumpling shop on changqing avenue, they do lamb and chive jiaozi for like 12 yuan a dozen and it's way better. also the bus from the railway station to the loess plateau takes about an hour but it's only 10 yuan, just make sure you catch the one that says "s202" on the front or you'll end up in a different county
the nightlife hub tip is decent but fair warning - nanmen square gets loud til like 2am especially on weekends so dont book there if ur a light sleeper. the ramada encore is actually my go-to for work trips, their business center has a printer that actually works which is rare in qingyang. one thing i havent seen mentioned is that the east bus station near donghu park has direct buses to the zhou ancestral temple for like 15 yuan, way cheaper than a taxi
