solid plan, i did basically this exact route last spring and it worked great. one thing the guide doesn't mention is that the bus to baotianman can fill up fast on weekends, so get to the station by 7am to snag a seat, otherwise you might be standing for the whole 1.5 hours.
for the jade market, don't buy anything from the first row of stalls near the entrance. the real deals are in the back where the old guys sit with their own carved pieces, i got a small dushan jade pendant for 40 rmb after some haggling and it's way better quality than the tourist stuff up front.
also if you have time on day 3, walk a block east from fuyang street to xinhua road, there's a tiny dumpling shop called lao wang's that does 15 rmb for a plate of 20 pork and chive dumplings. no english sign but you'll see the locals queueing at lunch
good plan, i'd just say for the nanyang museum on day 1, make sure you check if it's actually open cause they've been doing renovations on and off this year and sometimes it's closed without notice. also the spicy noodles at laojie are solid but ask for extra chili oil on the side, they go lighter on it for tourists sometimes
yeah this is a great plan, i live here and you've basically nailed the highlights. just a heads up on the baotianman hike, the main loop is nice but if you're fit there's a shorter side trail that leads to a hidden waterfall about 40 minutes off the main path, ask the ticket staff for directions cause it's not marked well. also the farmhouse lunch spot you mentioned is legit, the old lady who runs it makes a mean yam porridge that's not on the menu, just ask for "shan yao zhou" and she'll hook
