honestly the museum is good but you gotta check out the Huainan Mining History Museum too, it's smaller and kinda hidden near the subsidence lake but it tells the story of why the city is the way it is. the bamboo slips are cool but seeing the old mining equipment and photos of how the ground literally sank is more eye-opening imo. also if you're at Bagong Mountain, skip the main trail and take the path that branches off to the right about 10 minutes up, it leads to an old pavilion with no crowds and a better view of the city sprawl.
solid write-up, covers all the bases. one thing i'd mention is the subsidence lake boat tours can be hit or miss depending on the wind, if it's gusty they'll cancel last minute so call ahead or check their wechat. also the pedestrian street has a hidden alley near the south entrance with a guy selling these incredible sesame cakes, they're like 2 RMB each and he bakes them in a clay oven, best snack in town.
This is a solid list. I'd add that the museum's second-floor Han Dynasty section has a replica of a noble's tomb you can walk through, which is easy to miss if you rush. For the beef soup, Old Wang's is good but I prefer the one on Chaoyang Road near the hospital, they add more tripe and the broth has a deeper flavor. The night market on Longhu Road is better for drinks and people-watching, but if you want the best grilled skewers, walk a block east to the smaller alley market where the vendors use charcoal instead of gas.

solid plan, really captures the city well. one thing i'd say is don't bother with bus 29 to shouxian if you can grab a taxi instead, it's like CNY 30-40 and saves you almost half an hour. the bus can get cramped and slow through the old town traffic.
also, if you're doing bagongshan in the morning, try to hit the trail behind the temple first. most people stick to the main path but that back loop has a little pavilion with a killer view of the whole city on a clear day. just watch your step, some of the stone steps are loose.
This is a solid itinerary. One thing I'd add is that if you're at Shouxian, don't miss the Da Bao'en Temple just south of the city wall. It's a short walk from the museum and has a really impressive Ming dynasty pagoda that most tourists skip. The entry is only about CNY 10 and it's way quieter than the main wall area.
For the night market on Huaihe Road, the grilled skewers are good but I personally prefer the ones from the stall near the north entrance. The guy there uses a spicier rub and they come out crispier. Just a heads up that the market gets packed around 7:30 PM so go a bit earlier if you want to grab a table at one of the noodle shops nearby.
