For the night market, the grilled eggplant at the fourth stall from the end is worth the walk, they brush it with fermented bean paste and garlic oil before grilling. Most people queue at the meat skewer spots and miss it entirely.
ngl the scallion pancake spot on Zhongshan Street is legit, been going there for years and the lady remembers my usual order (extra sesame, light on the scallions). one thing the guide missed is the vinegar chili oil they keep under the counter, ask for it and it takes those pancakes to another level.
also if you're hitting the night market on Renmin Road, skip the first few skewer stalls near the entrance, they're tourist traps. go deeper to the third row where the guy with the red apron grills lamb and cumin skewers, 6 yuan each and way more flavor.
oh and the tanghulu vendor near East Gate sometimes runs out by 8pm, so if you want the candied hawthorn sticks get there earlier in the evening
solid write-up, covers the bases well. one thing i always tell people is to hit the shengjian bao guy on Xinhua Road before 8am, he's set up near the pharmacy and they sell out fast. 8 yuan for 4 and the bottoms are caramelized perfect, way better texture than the ones at Lao Wang's.

also the tanghulu vendor near East Gate has a secret menu item, ask for the yam version instead of hawthorn, same price and the texture is way more interesting. he keeps them in a separate tray under the counter so you gotta speak up.
Hengzhou hidden gems for a 6 month trip?
honestly the old hutong area near beimen market is where i spend most of my time. there's a tiny noodle shop called lao zhang's that does this insane lamb biangbiang with chili oil that tourists never find. also the abandoned railway track behind the eastern factory district has been painted over by local artists and it's really peaceful at sunset. for something weird check out the clock museum near west lake plaza, it's in a basement and run by this old guy who collects soviet era timepieces.
if you're here for 6 months you gotta hit the night market under the east bridge on fridays, not the tourist one near the lake. there's a guy who grills spicy tofu skin with pickled radish that's better than anything in a restaurant. also the ceramic museum is kind of a hidden gem, it's in an old temple and they let you try the wheel for free if you go on a weekday morning
the botanical garden on the south edge of town is my go-to when i need quiet, it's huge and barely anyone goes past the first few paths. there's a little tea house tucked near the bamboo grove that sells fresh osmanthus cakes for like 3 kuai, only open weekends though. also if you're into weird, the folk medicine museum on wenhua road has a room full of preserved animal parts that's pretty unforgettable
