honestly this is a solid plan, only thing i'd tweak is day 1 lunch. lao wang is good but if you want something less touristy theres a tiny dumpling place called Xiao Zhang's on 3rd lane off old street, no sign just a red lantern. their pork and chive dumplings are 12 yuan for 12 and they make them fresh right there. way better than the noodle house imo.
also for the night market prob skip the stinky tofu unless you really love it, the fermented tofu at stall 47 is way milder and tastier. costs the same 8 yuan too.
west hills hike is no joke btw, take water with you. there's no vendors on the trail until the summit. i learned that the hard way.
imo the day 2 folk performance is worth it but dont sit in the front rows unless you want the drummers to blow your eardrums out. i was in row 3 last year and the gong literally made my ears ring for an hour. middle section around row 8-10 is the sweet spot for sound and you can actually see the whole stage without craning your neck
