this is a solid itinerary, especially the day 1 old town walk. i'd add that the bajing terrace is way better right before sunset than midday, the light hits the river just right and you get less crowds. also, the hakka museum in the new district is pretty big, give yourself a solid two hours there, and the bus line 28 can be packed during lunch rush so maybe grab a taxi for 10-15 rmb instead. one thing missing is the yugu platform on the city wall, it's a small free spot just north of the floating bridge where locals fly kites and you get a great view of both rivers meeting

honestly this is a really solid list, you covered almost everything i'd tell a friend visiting. one thing i'd add is the old town's morning market vibe around zhongshan road, especially before 9am when the vendors set up right under the song dynasty wall. you can grab a fresh bowl of Ganzhou rice noodles from a street cart for like 8 RMB and just watch the city wake up, way more authentic than the night market imo.
also if you're into hiking, skip bajing mountain on weekends unless you get there by 7am. it gets packed with local families and the trail gets bottlenecked at the waterfall section. weekdays it's nearly empty though, which is perfect.
yugu terrace at golden hour is legit, but if you go on a clear day you can see all the way to the gan river bend from the top. the 30 rmb feels worth it when the light hits the old city wall downstream
also the bike share is cheap but the bikes are heavy and the hills around the old town are no joke. i'd stick to walking or didi unless you're heading to bajing mountain, the flat roads near the river are fine for cycling
solid list, covers the main spots well. if you're around on a sunday morning, check out the flower and bird market on wenqing road near the night market area. it starts around 7am and runs till noon, locals bring songbirds in tiny cages and haggle over potted orchids. even if you're not buying anything, the energy is fun and there's a guy who sells fresh sugarcane juice for 5 RMB a cup
also the gan river cruise is nice but the narrated history is only in chinese, so if you don't speak it you're just staring at lights for an hour. i'd skip it and instead walk across the xinfeng bridge around 8pm, the view of both the old wall and the newer bridges is better and it's free
