Dogdogdog's Secret?

Question

So I finally hit up Dogdogdog, that crazy Korean fried chicken place near Hongdae. The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

elly · Answer

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

adelequast · Answer

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

heads up, the "secret" might just be gochujang mixed with a bit of cola. i know that sounds weird but a lot of the older spots in Hongdae cut their sweet glaze with soda instead of straight sugar water, gives it that caramel thing without being cloying. the owner used to run a spot near Sangsu station before this, same trick there. next time ask for the sauce on the side and let it sit for like 10 min, you'll taste the fizz base once it cools a bit.

lona · Answer

if u really wanna crack it ask for the sauce "덜 맵게" next time (less spicy). they make the base in two batches, one with extra gochujang, and the mild one is where u can actually taste whats underneath. last time i did that the bartender leaned in and said the trick is a spoon of yeondu (the plum syrup they keep in the back for the makgeolli), not maesil cheong like everyone assumes. different thing, more tart. go on a tuesday tho, weekends the kitchen just dumps both batches together and u lose the plot
