Ajmer hidden gems?

Question

Headed to Ajmer in about 6 months and want to find the spots that aren't in every guidebook. Any underrated places or local favorites I should check out?

You might want to wander through the narrow lanes around the Nasiyan Jain Temple. The main temple is well known for its gold leaf work, but the older red sandstone structure next to it is usually empty and has some beautifully carved pillars. Grab a kachori from the stall just outside the temple gate, it's been there for decades and the owner still fries them in ghee.

Pair that with a breakfast at the old Irani cafe near Clock Tower, their bun maska and chai are better than anything you'll find near the main market.
