**🍗 Chicken Inasal Essentials** Bacolod is the birthplace of chicken inasal, and Manokan Country near SM City Bacolod remains the go-to spot for this grilled delight. A plate of inasal with rice and sinamak (spiced vinegar) costs around PHP 120 to PHP 180. Aida's and Nena's are two long-standing stalls worth trying, open from around 10 AM to 9 PM daily. **🍰 Sweet Treats and Desserts** Calea Pastries and Coffee on 6th Street serves the legendary mud pie, a rich chocolate and coffee ice cream cake for about PHP 150 per slice. Another must-try is the napoleones from Pendy's, a flaky pastry filled with custard and topped with sugar glaze, priced at PHP 60 each. Both shops are open from 10 AM to 9 PM, and Calea often has a line, so go mid-afternoon. **🍜 Batchoy and Noodle Soups** For a hearty bowl of batchoy, head to Deco's Original La Paz Batchoy at their branch on Lacson Street. A regular bowl costs around PHP 120 and comes with pork liver, chicharon, and egg. They open at 7 AM and close at 9 PM, perfect for breakfast or a late lunch. **🍢 Street Food and Snacks** In the evenings, the Bacolod Public Plaza area comes alive with street food stalls selling grilled skewers, fish balls, and kwek-kwek for PHP 10 to PHP 30 per stick. Try the isaw (grilled chicken intestines) and betamax (grilled chicken blood) at the Manokan Country night stalls. Vendors typically set up from 5 PM to 11 PM. **🍽️ Sit-Down Local Restaurants** For a full meal of Bacolodnon favorites like kansi (sour beef soup) and linagpang, visit Ading's Restaurant on Lacson Street. Mains range from PHP 200 to PHP 350, and they are open from 10 AM to 9 PM. Another option is 21 Restaurant on 21st Street, known for its crispy pata and seafood, with prices from PHP 300 to PHP 500. **☕ Cafes and Coffee Shops** Bacolod's cafe scene is growing, with spots like Coffee Culture on Lacson Street offering local beans and pastries. A latte costs around PHP 150, and they open at 8 AM. For a quieter vibe, try The Bean Connection on 18th Street, open until 10 PM, ideal for remote work or catching up with friends. **🛒 Markets and Food Halls** The Bacolod Central Market on Araneta Street is a great place to sample local produce, longganisa, and dried fish at low prices. Come early, around 6 AM, for the freshest picks. For a modern food hall experience, check out The Marketplace at Ayala Malls Capitol Central, open from 10 AM to 9 PM, with various stalls offering Bacolod specialties. **💡 Practical Food Tips** Most restaurants in Bacolod accept cash only, so carry small bills. Tipping is not mandatory but appreciated, and 10 percent is generous. To avoid crowds, eat lunch before noon or after 1 PM, and dinner before 6 PM or after 8 PM. For the best inasal, go to Manokan Country around 5 PM when the grills are fired up.
