**🍜 Start with Ramen** Niigata is famous for its shoyu ramen, and the best place to try it is at Tetsu, a beloved shop in the city center. Located at 1-2-10 Higashiboridori, Chuo-ku, it serves a rich, soy-based broth with thick, curly noodles for around 900 yen. Go early, as lines form by 11:30 AM, and the shop closes when the soup runs out. **🍣 Sushi from the Sea** The Sea of Japan provides Niigata with incredible seafood, and Sushi Dokoro Minato in the Furumachi district is a local favorite. At 5-1-2 Furumachi, Chuo-ku, you can order a chef's omakase for about 3,500 yen, featuring fresh tuna, squid, and seasonal fish. For a budget option, head to the Niigata City Fish Market, where stalls sell sushi bowls for under 1,000 yen. **🍶 Sake Tasting Spots** Niigata is Japan's top sake-producing prefecture, and Ponshukan at Niigata Station is a must-visit. For 500 yen, you get a token to sample five of over 100 local sakes from vending machines. If you prefer a sit-down experience, try Sake no Jin in the Bandai area, which offers tasting flights for 1,200 yen. **🍤 Street Food Stalls** The Bandai City area has a lively street food scene, especially around the Bandai Bridge. Look for stalls selling hegi soba, a local buckwheat noodle dish, for around 600 yen per serving. In the evening, the Furumachi district comes alive with yatai stalls offering fried seafood skewers and grilled skewers for 300 to 500 yen each. **🍦 Sweet Local Treats** For dessert, try the famous wappa meshi, a steamed rice dish with salmon and ikura, but for something sweeter, head to Sasaramachi in the city center. The area is known for its sasadango, a sweet rice cake wrapped in bamboo leaves, sold at shops like Sasadango no Sato for about 150 yen each. Also, don't miss the soft-serve ice cream at the Niigata Rice Cracker Museum, which comes in flavors like soy sauce and rice. **🏮 Evening Izakaya Crawl** For a classic Japanese night out, start at Yakitori Torisho in the Furumachi district, where skewers cost 150 to 300 yen. Then, wander to the nearby streets of Nuttari, known for its cozy izakayas and bars. Many offer local dishes like noppei soup and fried tofu, with drinks starting at 500 yen. **🍚 Rice Dishes to Try** Niigata's Uonuma rice is considered the best in Japan, so try it in a simple onigiri at Onigiri no Omusubi in the station building. For a heartier meal, order the koshihikari rice bowl with local toppings at Rice Terrace in the city center, priced around 1,000 yen. The rice is so good that it's often served with just a sprinkle of salt. **🍁 Seasonal Specialties** In winter, warm up with a bowl of tara no shirako (cod milt) hot pot at local restaurants like Kappo Yuki in the Chuo-ku area. Prices start at 3,000 yen per person, and the dish is only available from November to March. In summer, try the refreshing hiyashi soba at Menya Kurosawa, a seasonal cold noodle dish for 800 yen.
