If you're around on a weekday, check out the Omsk Fortress museum when it's quiet. The reconstructed wooden walls aren't much to look at from the outside, but the guides there know stories about the Decembrists that you won't find in any guidebook. Also, grab a pastry at the bakery on Krasny Put, the one tucked behind the big Soviet mosaic. They do a pirozhok with sauerkraut and mushroom that's better than anything you'll get at a restaurant.
Skip the tourist shops on Lenina and head to the bazaar near the old Tarsky Gates on a Sunday morning. The vendors there sell homemade dried fish from the Irtysh, and you can grab a cup of kvass from a babushka with a barrel. It's a more chaotic but real slice of Omsk life. For a quiet evening, walk along the Irtysh embankment past the Uspensky Cathedral, then duck into the underground bar called Podval on Karla Marksa for cheap beer and a dimly lit Soviet vibe.
not sure if anyone mentioned the leningradskiy bridge at sunset yet, it's not a hidden spot exactly but most tourists skip it because it's out of the way. walk from the bridge side down to the little beach area, there's a path that leads to an old abandoned pier where locals fish and drink cheap beer. also the planetarium on prospekt mira does night viewings sometimes with a telescope that's actually decent, you just have to call ahead and ask in russian because their website is dead.
