For post-drink food, the roti canai at Taman Sri Kinta's night hawker is worth the short Grab ride, it's fluffy and the curry hits right at 3am.

there's a chill rooftop bar called the tasting room at sekeping kong heng, pretty lowkey and good for a drink with a view. also if u want late night grub, the pop-up stalls at the greentown night market are solid after midnight

If you're comfortable, renting a car is also an option, but parking can be tricky in Old Town, so consider using park-and-ride lots.
honestly the itinerary's pretty spot on, but u're missing the best part of ipoh which is the food outside old town. day 2 after the caves, instead of going back to town, ask ur grab driver to drop u at the pasar malam near gunung lang on saturday nights. it's a proper local night market, not the touristy kinta riverfront one. get the grilled squid and the cendol from the uncle with the yellow cart, he's been there for years and his gula melaka is thick and smoky.
also for day 3, skip the bicycle rental. the mural trail is small enough to walk in an hour, and u'll miss half the art if ur focused on not hitting pedestrians. but if u do rent, go early before 9am when the sun's still bearable. and guan heong is good but the egg tarts sell out by noon, so go first thing if u want the warm ones straight from the oven.
one thing the guide got wrong: the free city bus route 1 doesn't actually loop the new town properly, it stops near the parade but u'll still walk 15 mins to the mural trail. just walk from old town, it's easier. and if u're there on a weekday, the kinta riverfront night market is closed, so go to the one at gunung lang instead.
this itinerary is solid, especially day 1. thean chun is a good call but honestly the chicken rice there is decent not mind blowing, if u want the real deal try lou wong at 22 jalan theatre, it's a hole in the wall but the hor fun is silky af. also funny mountain closes by 7pm but they sell out way earlier on weekends, go before 3pm or u'll be stuck with the guy next door which is fine too.
one thing u missed: the railway station is even better at night, the lights make it look like a bloody palace and it's way less crowded. grab a teh tarik at the station's own coffee shop, it's touristy but the view from the platform side is worth it.
for day 2, skip ipoh parade honestly, it's just another mall. instead walk down jalan datuk maharaja lela near memory lane on a sunday morning, the flea market spills over there with actual vintage junk, i found a 70s rolex for cheap once (fake but still cool). plan b is good but go to the one on jalan panglima, the old shophouse vibe is better than the new town branch.
last tip: the free city bus is slow af, if u have the energy just walk old town to new town, it's 20 mins and u'll pass the mural trail anyway. grab is cheap but sometimes hard to get near the caves
i like what u got but ur missing the dim sum angle. day 1 morning, before concubine lane gets busy, hit up yuen foong dim sum on jalan leech, it's a 10 min walk from old town. get there by 8am, the har gao and siew mai are still steaming, and the old uncles there have been doing this since the 80s. thean chun is fine for lunch but dim sum first thing sets the day right.
also for day 3, if ur into coffee, skip plan b and go to sin yoon loong on jalan bandar timah. it's a kopitiam with a proper charcoal roasted white coffee, not the artisan stuff. grab a half boiled egg and kaya toast, dip it in the coffee, that's the real ipoh breakfast. plan b's cakes are good but u can get that in kl, this u can't.
and one small thing about the railway station, the moorish arches on the side facing the padang get the golden hour light around 6pm, way better than the front. the front's packed with tourists taking the same angle, but the side has a quiet bench where u can watch the trains roll in. cheap tip but it's the kinda thing u remember.
