How do I find someone who is a member of Saito 🍣 ?

As everyone is acutely aware, Saito is invite only for those who are members. I really want to go, how would I find someone willing to take me ? As everyone is acutely aware, Saito is invite only for those who are members. I really want to go, how would I find someone willing to take me ?

yeah the member route is tough but not impossible. try hanging around the bars in ginza near the building saito is in, like bar high five or star bar. the bartenders there know who the regulars are and might drop a hint if you're a decent tipper and not weird about it

also worth checking if any of the luxury hotel concierges in tokyo have pull. the palace hotel or the ritz carlton concierges have been known to work miracles for guests, though you'd probably need to be staying there

tbh you could try hanging around some of the high-end hotel concierges in ginza, like at the palace or the peninsula. if you're polite and tip well they sometimes have connections or know members who come through. not a sure thing but worth a shot

ngl this is a long shot but i've seen it work - make friends with the staff at hotel concierges in ginza or marunouchi. the palace hotel tokyo and the okura both have concierges who've been around forever and sometimes have connections with member-only places. you'd need to be a guest there and build a real rapport with them though, not just walk in and ask

another route that's less talked about is the japanese food bloggers who specialize in high-end dining. some of them have been going to these places for years and might be willing to bring you if you offer to cover their meal. check out people writing for tablelog's premium section or the ones who post regularly on note.com about ginza sushi

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
