The pain au chocolat is the one I keep going back for, better than the plain croissant honestly. Go before 10am on a weekday, weekends the line on the Omotesando side runs 20 minutes.

honestly Saturdays are a lost cause there, I don't even bother anymore. try like 8 on a Wednesday and the case is basically untouched. staff told me they bake a second smaller batch around midday too
That matches what I saw on a Sunday too, the kouign-amann tray was down to two by about 9:15. I've had better luck asking staff to hold one if you're buying a coffee first. They'll usually set it aside.
fwiw their second bake lands around 1pm most weekdays and the case is way calmer then
