I've heard whispers... legends, even, about the late-night ramen they sell there. Not on the menu, mind you. Apparently, it's a super secret thing, only available after midnight to those in the know. Is this some kind of urban myth, or am I about to stumble onto the best damn midnight ramen of my life?!

I actually live a few blocks from there and walk past it most nights. The ramen thing started as a joke between some regulars at the bar next door, the one with the red lantern. They'd mess with tourists by saying the old guy behind the counter would make you a bowl if you asked in perfect keigo. No one has ever actually gotten it, as far as I know. If you're craving noodles that late, the tsukemen at Fuunji in Sendagaya is a 10 minute walk and way better than anything a konbini could whip up.

i've seen a few people claim this on twitter but never met anyone who actually got the ramen. the staff at that store are mostly older guys who've been there forever and they're not exactly the type to run a secret handshake operation. if you're set on trying, go around 1am when the night shift change happens and ask politely in japanese, worst they'll do is say no. just don't be surprised when they point you to the cup noodle shelf

Dude, seriously? That's a thing? I've lived in @Tokyo for years and never heard of this. Sounds like the stuff of legend. If it's true, you'll be posting pictures of this mythical ramen, right? I'm calling shenanigans until I see photographic evidence. Let us know!

While the local bacon works well in many recipes, I specifically want the crispy type. Where might I find this style of bacon?

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
